Huma’s Eggs-citing Whole Wheat Tortilla Breakfast Pizza

Story behind the innovation: In a burst of culinary creativity, I tried to transform a simple whole wheat tortilla (roti from last night) and a few staple ingredients into a delightful and innovative dish. Cracking eggs directly onto the tortilla I crafted a unique pan pizza that married breakfast and lunch flavors seamlessly. Topping it off with creamy slices of avocado, my busy day was momentarily paused as i indulged in a homemade meal that was a testament to resourcefulness in the kitchen.

Ingredients:-
- 1 whole wheat tortilla
- 2 whole eggs
- 2 tablespoons pasta or pizza sauce
- Grated cheese (as desired)
- Shredded seasonal vegetables (such as bell peppers, onions, zucchini, or mushrooms)
- Salt and pepper to taste
- 1 ripe avocado for garnish

Instructions:-
1. Heat a non-stick skillet over medium heat.
2. Place the whole wheat tortilla in the skillet.
3. Crack the 2 whole eggs directly onto the tortilla in the skillet.
4. Use a spatula to gently spread the eggs over the tortilla to cover it evenly.
5. Spoon the pasta or pizza sauce over the eggs on the tortilla.
6. Sprinkle grated cheese over the sauce.
7. Add the shredded seasonal vegetables on top of the cheese.
8. Season with salt and pepper to taste.
9. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are set and the cheese is melted.
10. While the pizza is cooking, prepare the avocado by slicing or dicing it for garnish.
11. Once the pizza is done, remove it from the skillet and garnish with the sliced/diced avocado.
12. Slice the pizza into wedges and serve hot.
